These grapes are harvested in cool hours, at maturity, destemmed, crushed and then fermented for 6 to 12 days. Fermentation takes place between 15 and 18 ° C and the wine is delicately pressed. The wine is quickly clarified and then stored at low temperature to preserve all the aromas. Finally, the wine is racked, filtered and bottled.
